Southwestern Flank Steak               Printable version

Ingredients:
Marinade:
1 Tbspn Chipotle in adobo, minced
½ Tbspn garlic, minced
2 Tbspn Cilantro, minced
2 oz. Olive oil
3 oz. Red wine
2 oz. Soy Sauce

Directions:
Combine ingredients for marinade and marinate flank steak for at least 1 hour (6-12 hours ideal).  Grill steak until desired doneness.

 


Greek Style Lamb Kabobs           Printable version

Ingredients:
2 ½ lbs Boneless leg of lamb, cut into 1” cubes
¼ C Minced garlic
¼ C Olive Oil
¼ C Lemon juice
2 Tbspns minced parsley
2 Tbspns minced thyme
2 Tbspns minced oregano
1 Tbspn ground coriander
1 Tbspn paprika
1 Tsp ground tumeric
1 Tsp ground cayenne pepper
1 Tsp saffron
1 Tbspn each S/P

Directions:
Combine all ingredients and marinate in the refrigerator for at least 4 hours.  Grilled to preferred doneness.

 


Mint Tzatziki           Printable version

Ingredients:
1 Pint plain yogurt, drained
½ Seedless cucumber, grated
1 Tsp minced garlic
1 Tbspn Olive oil
1 Tbspn lemon juice
1 Cup minced mint
S/P to taste

Directions:
Combine all ingredients together and serve chilled.
